nana's Norwegian pancakes

It's amazing to me how many memories I have attached to these crepes. At Christmastime, my grandparents would have their 11 grandchildren stay overnight at their house, and my nana would make pancakes for everyone (parents included) the next morning. Also, randomly throughout the year my mom would get phone calls from my nana that she would be making pancakes in the morning and to come on out. It was like Christmas for me every time, as these are one of my favorite foods.

After making them for my small family of 3 now, I am amazed at how many eggs she must have gone through - and how many batches of these she would have had to make - to feed 20ish people! I remember her standing at the griddle while we all ate, making more until we were all satisfied. We would all count how many we could eat, and if I remember correctly, my record was 13.

Nana's Norwegian Pancakes

3 eggs
1 c flour
1 c milk
1 Tbsp melted butter

Spread out thin on hot griddle. Turn and watch carefully. Serve with sugar, syrup, strawberries, or cream.

I like to eat mine with butter and sugar. Delicious! It was so special for me to make these for Rooney and watch her enjoy them, too.
